I invented this as a side dish for a family dinner, at which I was to be the only vegan-they liked it! The garnet yams & brown rice are the base; you can make this as big or as little as you wish and play with the ingredients. Enjoy!

Bake 4 garnet yams in either a small oven or the microwave until tender, but not mushy. Scoop out the potatoes from their skins and chop.
Add approximately 1 and 1/2 C of cooked brown rice (I used a package and a half of Tasty Bites organic brown rice since it cooks in 90 sec. in the microwave and is perfect every time!--found at Natural Grocers store.)
Add finely chopped almonds to complement, but not dominate; the same with the raisins. Add vegetable broth a tablespoon at a time, enough to create a moist but not soupy dish.
Spices are all to your taste: I used gentle amounts of garlic granules, thyme, cinnamon and salt. I cooked these ingredients in a saucepan on low to medium heat till heated through, adding vegetable broth as necessary and then put in 1 1/2 quart casserole dish to bake in the oven for the meal the next day. Bake about 30-40 minutes in a moderate oven (350F) adding more broth if needed.
