Raw Food Made Easy, Jennifer Cornbleet---slightly altered by Eve
A refreshing dressing for your summer salads.
240 ml 1 c. peeled, seeded, chopped cucumber
59 ml1/4 c. olive oil (or oil substitute:stir 1/2 tsp. cornstarch into 1/4 c. water and heat till thick)
22 ml1 & 1/2 T. lemon juice
1 ml1/4 tsp. salt
1 ml1/4 tsp. crushed garlic
dash cayenne (optional)
7 ml1/2 T. minced fresh dill or basil or 1/4 tsp. dried
5 ml1 tsp. minced onion
Combine cucumber, oil or oil substitute, lemon juice, salt, garlic and cayenne in a blender or processor and process until smooth. Add dill weed (or basil) and onion and blend just to mix.
