Here at last are two more of the recipes from our potluck last month. Nancy and Mary came to the potluck together so it seems only fitting to offer their recipes together ---and what a great meal you'll have if you make them both tonight. Here is Nancy's tasty Kale and Lentil Salad:

and Mary's spicy Veggie Chili:

Last time I wondered if others are having vegan potlucks in other places and was delighted to hear back from Nomi in Kansas City:
So lovely to see the photo of your Portland group and read about the potluck. At the Mornings of Mindfulness I attend generally monthly with the Heartland group in KC, we always do a vegan potluck and it's always a good time. Last month I took a dish I realized could have been a contribution to your website, but it was eaten before I had the sense to think about taking a picture! One of these days... Nomi
Of course I got curious about that --- she told me it's a fresh salad with azuki beans. Maybe we'll get the details before too long...
I also heard from Ellen in Texas, who is getting fresh veggies from her garden now. She is celebrating an "amazing rainfall" that is putting an end to the drought there:
Thanks for the great email about the potluck including the group picture! Also, I will try the recipe [the soba noodle salad]. I know it tastes good just by the name of the dish! Thanks to Beth for this great recipe!.....
I am also sending a picture of some summer rolls. My gardening partner Kazuko made them. She is a true artist and carefully placed the nasturtium flowers to look so pretty! It looked so nice, I didn't want to eat them! It was very delicious. She makes these with whatever veggies she happens to have. This time she used: swiss chard (leaves & stems), shiso leaves, beets, seasoned cooked tofu and of course, the flowers. She also made a delicious peanut dipping sauce. She is so talented! Take good care Eve! Thanks for all that you do! Aloha, ellen
Mary in Michigan sent an article about the Good Karma Diet:
