Lots of news this week, including two recipes I haven't entered on the website yet. Here they are, no link needed:

here is a parmesan recipe, easy to make and tasty and on top of a raw tomato-sauce with zucchini - spaghetti ( made with a spiralizer )or zucchini-tagliatelle ( made with a potato peeler or a mandoline ) it is something delicious for hot summer days. Vegan Parmesan Cheese
For one cup
1/2 cup sesame seeds
* 3/4 cup nutritional yeast
* 3/4 teaspoon fine sea salt
* Use the food processor to mix all ingredients until completely ground. Keep the mixture in an air tight container in the fridge.

Here is a new recipe I came up with last night for our black bean
burritos. It's quick and easy. Feel free to tweak it anyway you like. betsy
Cream Sauce
1 cup almond milk
2 T. cashews
1 tsp cumin seeds
hot pepper flakes
2 T nutritional yeast
1 T. arrowroot dissolved in 2 T water
Heat almond milk, add cashews, seeds, pepper flakes and stir until
simmering. Add arrowroot/water mixture and stir until thickened.
Pour liquid into a vita mix, add nutritional yeast. Blend until smooth.
Adjust for seasonings. Add more of anything.
This is a quick and easy sauce. Any other nut milk could be used, etc.
Eat and enjoy.

Jana in the Netherlands sent news of her group's first Mindful Cooking potluck!
Dear Eve,
We had our very first mindful potluck on Tuesday under an ancient sycamore tree in our local arboretum in Wageningen. It was very special and everyone was very excited and inspired to eat more mindfully. Nobody brought a camera so I only made a few snapshots with my mobile phone. We were with ten, and I am not on the pictures. We plan to do this more often! I made the date nut muffins.

Cooking is at an all time low for me at the moment. I've hardly ever found it a pleasure but in recent months I get a strong feeling of irritation at the thought of shopping for and putting together a meal. I'd like to try and find a way of enjoying cooking though. Any ideas?
