22 Day Veg Challenge Panel Discussion and Cooking Demo

Hello Mindful Cooks! For those of you live in and around Portland, OR, there will be a Vegan for the Holidays cooking demo associated with the 22 Day Veg Challenge and a stimulating panel discussion.

The panel of speakers will consist of:

Stephanie Feldstein from the Center for Biological Diversity, who will talk about the environmental impacts of eating meat

Daniel Redwood, DC, Director of the online Master of Science in Human Nutrition and Functional Medicine program at the University of Western States, who will speak about the nutritional aspects of a vegan lifestyle

Cameron Whitten, Lead Advocate of the social justice nonprofit group Brown Hope and organizer of Blackstreet Bakery, who will talk about the intersections of animal justice and racial justice

John Collins, who will share heartwarming stories about rescued farm animals at Out to Pasture Sanctuary

After the panel discussion, we will have a Vegan for the Holidays cooking demonstration by Kris Eisenman. Kris is a Physicians Committee for Responsible Medicine Food For Life Instructor and a professionally trained chef. She will demonstrate and share plant-based recipes for some traditional Thanksgiving side dishes. Her delicious Holiday Veggie Wellington recipe can be found on YouTube and will give you an idea of how extravagant and delicious vegan holidays can be. Kris will also discuss ways of keeping the extravagant holiday eating to just the holidays, and share additional wintertime recipes that are delicious yet healthy. If you have a favorite holiday dish that you just don't know how to veganize, bring the recipe and join us for the Q&A to leave with lots of great ideas.
