Even more veggie haggis, and thoughts on satiety

I'm still working my way through my new slow cooker cookbook," Fresh from the Vegan Slow Cooker" by Robin Robertson. Here is another tasty discovery, Black Bean Chili and Sweet Potato Casserole. It even includes a cheese sauce made with cashews and nutritional yeast:

Is anyone else a slow cooker cook? I hope you'll send your recipes. If you don't have a slow cooker, I think all the recipes can be adapted for your oven or stovetop.

I heard from a couple of you this week. My last message, about haggis and the poem Robert Burns wrote about that famous "chieftain of the sausage race" , had this response from Alison in New Hampshire:
What a winding path you lead to present a fully inclusive vegan international spread… I'm … speechless!

She wasn't speechless for long ---- she soon sent me an article with another vegetarian haggis recipe. I had no idea that there was more than one version! I was even more surprised to learn that Macsween, an Edinburgh company that specializes in haggis, sells many of the vegetarian kind. It's a fun article, with such lines as:
"Stir over a low heat until the oatmeal has plumpened."
and "I must say I find it hard to imagine my or anyone else's Scottish ancestors galumphing over the hills for a day's border-raiding after gorging on vegetarian haggis, but you never know."

I appreciate Christel's comments about mindful eating. Eating with more awareness has been on my mind lately. I have digestive issues so the idea of giving hormones enough time to work is interesting. It gives me more motivation to do it!

If Robin Robertson has written a cookbook for slow cookers, I might have to add one of these gadgets, along with the book, to my wish list. The sweet-potato/black-bean chili recipe looks great!

Yesterday I saw Crock Pots for sale in a store---that was the name for slow cookers back in the 70's when I got my first one---so now I can start calling them crockpots again. The new, expensive ones even have some kind of stirring mechanism!--- but my $5 cooker from the Goodwill works well enough for me. I really like doing my chopping and prepping in the morning, enjoying the fragrance all day, and then having dinner all ready at the end of the day.
