Winter Quinoa Dressing with Apple and Dried Cranberries



All the flavors of a Thanksgiving stuffing with no need for a turkey, and with fresh apples for added spark.


In large microwave baking dish, combine:
300 ml1 1/4 cups uncooked quinoa
410 ml1 3/4 cup vegetable broth ( I had to add extra)
1 Tbls olive oil
Cover and microwave for 11 minutes. (I had to add more time)

In large saute pan, melt:
2 Tbls vegan butter
2 stalks celery
1/2 yellow onion (about 1 cup)
170 g6 oz fresh mushrooms, chopped

Cook til tender, then add:
1 apple, cored and diced
120 ml1/2 cup dried cranberries
2 cloves garlic
59 ml1/4 cup pinenuts (I used sunflower seeds)
5 ml1 tsp minced fresh rosemary
10 ml2 tsp chopped fresh sage
Kosher salt and pepper

Combine quinoa with vegetable mix, and serve immediately.

I was more generous with all the vegetables and fruits and I think it needed them. ---Margaret
