Almost too pretty to eat! Pam brought these cute little skewers to our Spring Potluck.
Cherry Tomatoes (or Sugar Plum Tomatoes), whichever are sweeter
Mozzarella Balls (small--same size as tomatoes)
Basil leaves, fresh
Olive Oil
Salt and Pepper
Toothpicks
Place one tomato on the toothpick, then put one basil leaf next to it (may have to fold the leaf first to make it stronger so it stays on the toothpick), then place one mozzarella ball next to the basil leaf. End with a second tomato, then one last basil leaf.
Neatly arrange the mini-skewers in rows on a plate. Drizzle with olive oil and salt n' pepper. Serve at room temperature.
Note: You may substitute the dairy cheese with a homemade vegan mozzarella recipe of your choosing if you like.
