Sprouted Lentil Salad

This high-protein salad was popular at a potluck. The sprouted lentils are crispy and delicious!

Ingredients: 

470 ml 2 c. lentils, sprouted
180 ml3/4 c. tomatoes, finely chopped
120 ml1/2 c. clover sprouts (or any sprouts)
59 ml1/4 c. green onions, minced
59 ml1/4 c. fresh parsley
59 ml1/4 c. celery, finely chopped
59 ml1/4 c. red bell pepper, finely chopped
59 ml4 T. lemon juice
30 ml2 T. olive oil
2 ml1/2 tsp. salt
1 ml1/4 tsp. ground cumin
1 ml1/4 tsp. curry powder
15 ml1 T. fresh dill, or 1 tsp. dried

Instructions: 

Combine lentils, tomatoes, sprouts, green onions, parsley, celery, and red bell peppers in a large bowl. In a small bowl, mix lemon juice, olive oil, salt, cumin, curry powder, and dill. Pour over salad and toss gently.
