A colorful and refreshing combination of carrots, beets, and apple.
2 medium or one large beet (about 1 lb.), peeled and grated
1 large, firm, tart apple, with peel, grated
2 large carrots, grated
4 scallions, green and white parts, chopped
120 ml1/2 c. chopped cilantro (leaves and stems)
44 ml3 T. cider vinegar
44 ml3 T. olive oil
salt and pepper to taste
Combine the beets, carrots, apple, scallions, and cilantro in a bowl.
Whisk together the oil and vinegar and pour over the salad. Season to taste with salt and pepper. Serve or chill as desired.
