Quinoa Salad with Edamame and Mango



Linda says, "I made up this recipe earlier this year from the ingredient list on the 'California Quinoa Fresh Pack' from Whole Foods." It added color and goodness to our table at our summer potluck!


Serves: 4

470 ml2 cups cooked quinoa
240 ml1 cup edamame
1 red bell pepper, chopped
1 ripe mango, peeled and diced (or 2 fresh peaches or nectarines)
59 ml1/4 cup chopped or sliced almonds or hazelnuts
59 ml1/4 cup raisins
30 ml2 T coconut flakes
15 ml1 T balsamic vinegar
juice of one lime


Combine all ingredients in a large bowl and mix well. Can be served as is, or on a bed of mixed greens.

(The ingredient list from Whole Foods also contained cilantro and onion, but I don't add those. They could be listed as optional.---LInda )
