A colorful and refreshing combination of greens, fruit, and avocado, with quinoa for added flavor and protein. Cindy brought this salad to our Winter Potluck.
romaine lettuce
daikon radish
carrots
red cabbage
red pepper
kale
spinach
cilantro
mango
basil
grapefruit
avocado
pinch of salt
quinoa (cooked)
When you have the chosen salad ingredients in the bowl, add chunk size pieces of avocado and massage the greens lightly, making sure that some segments of grapefruit release juice.Then toss.
There is no dressing per se, but this salad can include any veggies or fruit of your choice.I personally add the quinoa to make it a full meal.---Cindy
