Potato-Salad

A genuine German potato salad with an apple surprise!

Ingredients: 

790 g 1 & 3/4 lb. potatoes (800g)
30 ml2 T. vegetable stock powder
830 ml3 & 1/2 c. hot water (800ml)

150 g5 & 1/4 oz. smoked tofu (150 g)
olive oil
120 g4 & 1/4 oz. gherkins (pickles) (120 g)
230 g8 oz. apples (250 g)
1 red bell pepper
1 onion
1 bunch parsley
59 ml4 T. sunflower oil
30 ml2 T. apple cider vinegar
herbal salt
30 ml2 T. nutritional yeast flakes
5 ml1 tsp. ground white pepper

Instructions: 

Cook the potatoes, peel them and cut them into thin slices.
Dissolve the vegetable stock in 3 & 1/2 cups of hot water and pour the solution over the potatoes.Let all this brew for several hours ( best over night ).

Cut the smoked tofu into little cubes and bake them in olive oil. Cut the gherkins and the onion in little cubes too . Cut the apples ( best are firm ones ) into pieces.

Drain 1 cup of the vegetable stock from the potatoes ( you can use it for other purposes ).

Mix the potatoes with cut gherkins, onion and apples. Flavor everything with parsley , yeast-flakes, pepper and herbal salt.
Enjoy.
