My husband dislikes cauliflower but he couldn't recognize it in this dish and ate it with gusto! We topped it with mushroom sauce and found it quite wonderful that way.
59 ml 1/4 c. vegetable broth or water
240 ml1 c. diced onion
470 ml2 c. quinoa (or other grain)
950 ml4 c. chopped cauliflower
2 ml1/2 tsp. salt
950 ml4 c. water
Heat 2 T. of the broth in a large saucepan. Add the onion and cook and stir 3 minutes, adding more broth as needed.
Add the quinoa and stir 5 minutes. Add the cauliflower, salt and water. Cover and cook 15-20 minutes until all the water is absorbed.
Mash the mixture with a potato masher, adding a little water or broth if necessary for a smooth consistency.
