Here is Margaret's recipe for the baked onions we enjoyed at the potluck. What could be simpler?

Instructions: 

Put peeled and halved (or quartered) onions in 9x14 roasting pan.
Sprinkle olive oil over them and bake till soft (1 hour @ 350)
As soon as you remove from oven, put into serving dish and pour a
heated, slightly reduced, mixture of:
2 T water
2 T brown sugar (I used xylitol)
2 T butter (oleo for vegan)
1/3 c balsamic vinegar
