Lorna created this tasty salad for our Spring potluck.
4-5 leaves fresh kale, chopped
broccoli, sliced
red onion, sliced
juice of one fresh lemon
120 ml1/2 cup or so of cashews
a few tablespoons of olive oil
Option- add one diced fuji apple
Lightly saute kale and broccoli (or steam) until just tender.
Toss all ingredients together.
