Gluten Free Vegan Cacao Almond Cookies

Theresa brought these crispy, chocolately, nutty cookies to our Spring potluck -- lucky for us!


Wet Ingredients:
30 ml2T Raw Organic Cacao Powder "Mayan Superfood"
180 ml3/4 cup Agave Syrup
120 ml1/2 cup Coconut Oil
5 ml1t Real Vanilla

Dry Ingredients:
530 ml2 1/4 cup Raw Almond Meal (Trader Joe's has it)
120 ml1/2 cup Organic Rice Flour
1 ml1/4 t Salt ( optional)
5 ml1t Aluminum Free Baking Powder
24- 30 Raw Almonds


Preheat oven to 375 degrees. Line 2 cookie sheets with parchment paper.

Mix together dry ingredients in bowl and set aside. In a large mixing bowl, mix wet ingredients making sure to blend cacao powder in well. Add in dry ingredients and stir well. Place heaping teaspoons of batter on cookie sheet several inches apart. The sheet should hold 12 cookies. Place one raw almond in the center of each cookie. Bake 8-10 minutes. At 8 minutes, check cookie bottoms for desired crispness and browning. Enjoy
