Garry made this for our November '10 potluck --- a satisfying dish for a cold night.
Carrots
Cauliflower
Broccoli
Onions
Parsnips
Potatoes
Olive Oil
Garlic
Cut the vegetables into ½ inch pieces. Place in a large mixing bowl. Mince 4 cloves of garlic. Pour ¼ cup of olive oil over the vegetables and add the garlic. Mix well to ensure all vegetables pieces are coated with olive oil. Coating the vegetables decreases the cooking time and minimizes the amount of vegetable “shriveling”. Let vegetables sit for 15 minutes before placing on oiled cooking sheets. Place the cooking sheets in oven set for 425 degrees and cook for ~45mins.
