Ellen's Namasu

Namasu is a Japanese side dish made with veggies of your choice and pickled in a simple vinaigrette. Although this is a side dish, it can be a meal with hot rice!! A nice cup of tea completes the meal.---Ellen

Ingredients: 

Mung Sprouts-Moyashi (one package) or your own freshly grown, about 2 cups. Blanch in boiling water for about 1 minute, drain, cool in cold water and re-drain.

Cucumber, seeded and thinly sliced

Wakame (dried seaweed), 2 T. dry; reconstituted in water for about 10 minutes

Add any veggies you have on hand (its fun to experiment). Hard root veggies work great like carrots, daikon, red radishes. All thinly sliced.

Sesame seeds

Pour vinaigrette* over veggies and marinate before serving:

59 ml4 T. ponzu (or soy sauce + lemon or lime juice)
59 ml4 T. seasoned rice vinegar (or unseasoned rice vinegar + sugar to taste)
5 ml1 t. sesame oil
salt and pepper

Notes: 

* I don't have a "real recipe" for the vinaigrette so I am sending you an "approximate" recipe. It's really made to taste and I eyeball the ingredients and taste as I go along.
