Quick and Easy Vegan Slow Cooking, Carla Kelly--tweaked by Eve
A colorful combination of red peppers and kale flavored with garlic, lime juice and red pepper flakes.
15 ml 1 T. oil
2 garlic cloves, minced
1/2 medium onion, sliced thin
1/2 red pepper in 1/4 inch strips
710 ml3 cups shredded kale, packed
1 ml1/4 tsp. black pepper
1 ml1/4 tsp. red chili pepper flakes
15 ml1 T. lime juice
salt to taste
Heat oil and sizzle the garlic. Add onion and red pepper and saute a few minutes. Stir in kale, black pepper, and red pepper flakes. Cover and steam until kale is tender. Uncover and add lime juice and salt.
If you don't have red pepper, green works too. It just won't be as pretty.
