Our worldwide community, and a tempeh question

We have two more joining our email circle, including our second Mystery Cook, Kathleen. The mystery is----where she is in the world! I wonder why people are getting shy about this. We have a little community going here and I think knowing where we all are helps us visualize our group. And it's fun to know if someone is chiming in from Singapore or West Virginia, Colorado or Germany. I keep a map of the world with stickers showing where we all are. Most of the time it is only those of us who gather for potlucks in Portland who get to see the map and sense the scope of our project. I'm trying to persuade our website builder (my son) to create a map on the website with a pinpoint for each of us. Maybe someday. Meanwhile, I'll attach a photo of the map to this message (you will see that my stickers are too big ---one sticker represents many of us in the more populous areas). So---- Kathleen, Janet, and anyone else who wonders, rest assured that we will not track you down or send you anything, We have no advertisers and no hidden agenda. You are welcome, wherever you are, and we'd like to put you on the map if you will let us!

Our second new member is Terry in Kansas, who adds a new state to our list! There are 106 of us now, in 20 states and 7 countries. Terry found us by searching the net for "how to make tempeh" and she jumped right in with a question: where to buy an adjustable water heater for a tempeh incubator. This sounds like a good question for Betsy, our resident tempeh expert, but maybe others can help out too? Welcome, Terry!

I had a bad experience with an eggplant a decade ago and hadn't cooked one since, but when my neighbor left town and gave me her CSA box, I was confronted with an eggplant once again. I searched about for a recipe to try and decided to do the parmesan version in Robin Robertson's Vegan Planet. Suddenly I'm an eggplant enthusiast! I hope you will enjoy this as much as we did:

I've been having a conversation with Cindy here in Portland about satiety----how to feel satisfied on a vegan diet. I have heard a number of people speak of the problem of roaming the kitchen soon after mealtime, wishing for something more. Cindy suggests: I guess I would bulk up on beans and grains and veggies-lots of fiber might halt the empty,never full stomach??AND DRINK MORE WATER, as trite as it sounds.

Now I'm curious to know if others have run into the satiety problem and found answers. Any thoughts?
