“Moosewood Restaurant Cooks at Home” has long been one of my favorite cookbooks, so I was excited when I received their newest addition as a present. For those unfamiliar with the name, Moosewood Restaurant has been serving vegetarian/vegan fare in Ithaca, NY for thirty-five years. I had the pleasure of dining there while visiting my stepson and his family years ago. Talk about yummy!
The cover of “MR Cooking for Health” boasts of “More than 200 new vegetarian and vegan recipes for delicious and nutrient-rich dishes.” Most recipes can be created in under an hour and those we have tried are truly delicious. Each recipe has serving and menu suggestions to form a complete meal. Our favorites so far are 'Tex-Mex Stuffed Portabellas' with 'Quinoa and Sweet Potatoes'. Making both for one meal is a bit labor intensive but the 'Quinoa and Sweet Potatoes' can be prepared while the mushrooms bake and the flavors are truly complimentary.
Introductory chapters and inserts between sections provide a bounty of information on healthful eating, ingredients, and preparation. While there is little new information for experienced vegetarians, novices will find it a treasure trove.
