Very Veggie Lasagna

A hearty and delicious version of a classic Italian dish.

Major Ingredients:

Caramelized Vidalia Onion Quiche

This recipe is from Vegan Brunch, by Isa Chandra Moskowitz. I have departed from her recipe in some details. Vidalia onions were not available, so I asked the grocer for any sweet onions. Four onions were still short of 3 pounds, but this was ok because my package of tofu weighed only 12 ounces, not a pound—and even so, I had a generous filling for the pie. It would have been hard to heap more filling into the shell. Speaking of the shell: instead of using Ms. Moskowitz’s recipe for the crust, I used my old standard, a recipe published decades ago by Mazola—which works just as well with canola oil.
I do wish to thank Isa Chandra for the basic recipe. This is a rich-tasting comfort food. She suggests “Serve with a salad for a simple and classy meal.”

Major Ingredients:

Rice-cake Rolls

Small, tasty rolls of seasoned vegetables and tofu with hoisin sauce.

Potato-Salad

A genuine German potato salad with an apple surprise!

Major Ingredients:

CD's Famed Tofu-Broccoli Enchiladas

This easy to make, spicy tofu dish will make a tofu lover out of anybody. If you are vegan you can just leave out neufchatel cheese. I like to serve it with sour cream and a side of re-fried black beans.

Major Ingredients:

Tofu Sour Cream

Susan says this non-dairy sour cream is "very easy and convincing". She sampled it in the Veg 101 class taught by NWVEG in Portland.

Major Ingredients:

Tofu-Nut Balls with Spicy Peanut Sauce

Tasty balls to have with your spaghetti or by themselves. Spicy Peanut Sauce is the topping Susan brought to our potluck, but your imagination is the limit.

Major Ingredients:

Brownies

Dense and chewy brownies with a rich, smooth texture.

Major Ingredients:

John's Tofu/Veggie Curry Stir Fry

A classic family favorite that can be made in about 45 minutes.

Seasons:

Hearty Vegetable Corn Cakes

This simple supper is a family favorite. When our son was little I left out the scallions and topped them with applesauce. When his tastes matured we added back the scallions. We kept the applesauce but also added salsa, which allows each of us to come up with our own combination of cool and hot depending on the mood of the moment.
