Fresh Arugula Soup (raw)

I just made this fresh arugula soup with arugula from my garden. So simple. If you like arugula, and I do, this is delicious and very refreshing. The blog I got it from says "Arugula is an excellent source of antioxidants, rich in vitamins A and C, folic acid, calcium, manganese, and magnesium. It contains carotenes and chlorophyll and is also a very good source of potassium, iron, zinc, riboflavin, and copper."
