High Protein Oil-Free Basil Pesto

I had serious doubts about the whole idea of oil-free pesto but this recipe blew my preconceptions away! It's delicious and you can use it on anything--pasta, potatoes, sandwiches, as a dip, or even as a salad dressing.

Summer Squash Stovetop Casserole

We tried a new yellow squash dish, thanks to neighbors who left some on our door! You’ll see that it is quite simple, and yet it is also surprisingly yummy! And a stove top casserole fits the bill in the very hot summer.

Fresh Arugula Soup (raw)

I just made this fresh arugula soup with arugula from my garden. So simple. If you like arugula, and I do, this is delicious and very refreshing. The blog I got it from says "Arugula is an excellent source of antioxidants, rich in vitamins A and C, folic acid, calcium, manganese, and magnesium. It contains carotenes and chlorophyll and is also a very good source of potassium, iron, zinc, riboflavin, and copper."
