Zucchini-Tomato Gratin

Yet another (not quite vegan) way to use zucchini!

Ingredients: 

30 ml 2 T olive oil
1 small red onion
3 medium zucchini squash
3 tomatoes
2 ml1/2 t salt
1 ml1/4 t pepper
15 ml1 T minced fresh thyme
85 g3 oz shredded gruyere cheese(3/4 cup)

Instructions: 

Slice zucchini and tomatoes about 1/2 inch thick. Slice onions into rounds. In large skillet over medium heat, saute onion and garlic in oil until translucent. Place zucchini slices on edge around the sides of an oiled baking dish. Place tomato slices against the zucchini. Add some of the onion -garlic mix against the tomato slices so all stand up. Repeat with zucchini, tomato, onion-garlic to form alternating rows. Place remaining vegetables in center. Sprinkle with salt, pepper, thyme, and cheese.
Bake 25 minutes in 350 oven. Serve warm or chilled. 6-8 servings
