Walnut-Raisin Cake

Unbelievably easy and tasty. It's intense so a small portion goes a long way.

Instructions: 

Walnut-Raisin Cake

2 c. walnuts
2 c. raisins
1/2 c. lemon or orange glaze
raspberries for garnish

Place the raisins and walnuts in a food processor fitted with the S blade and
process until the mixture sticks together. Transfer to a serving plate and
shape into a round cake. Frost with the glaze. Chill at least one hour.
Decorate with raspberries if desired.

Lemon or Orange Glaze

1/2 c. pitted medjool dates, soaked
2 T. lemon juice and 2 T water, OR 1/4 c. orange juice

Place the dates and juice/water in a food processor and process until smooth.

Notes: 

About the glaze: my food processor doesn't work well with such small amounts, so I just soak the dates in warm water, then peel off the skins and discard them. Then I mash the flesh and juice together with a fork.---Eve
