Tofu Migas Scramble

"Migas" are crumbs and are used in traditional scrambles in Spain, Portugal and Mexico. Breadcrumbs are used in Spain and toasted, broken tortillas in Mexico. This vegan version uses the convenience of tortilla chips but you could just toast some tortillas if you prefer. It's a quick, easy and tasty supper!

Ingredients: 

450 g 1 lb. tofu, crumbled
44 ml3 T. plant milk
2 ml1/2 tsp. cumin
2 ml1/2 tsp. pepper
1 ml1/4 tsp. sea salt
1 small onion, diced
2 cloves garlic, minced
240 ml1 cup roughly broken tortilla chips*
120 ml1/2 c. salsa
120 ml1/2 c. shredded vegan cheese

Instructions: 

Stir the plant milk and spices into the tofu in a medium bowl.
In a large skillet, saute onion and garlic in a little water until soft and fragrant.
Add the tofu mixture and stir to combine. Stir in the cheese and salsa and cook over medium heat until hot.
Stir in the tortilla chips near the end and serve hot.

This amount serves two as a main dish.

*I used blue chips which accounts for the black spots in the photo.
