Squash Soup

A family standby for MANY years....it cooks like it reads....easy and quick.....just be silly with squash for this one and trust it will be good........

Ingredients: 

garlic
onion
parsley
broth
zucchini
pasta
salt, pepper, Italian herbs to taste

Instructions: 

Saute a bit of garlic and onion in soup pan....add some chopped parsley.
Add water/ broth (depends on size of the pot and how much zucchini one has).
When liquid is ready to receive squash, add the diced veg remembering the size is linked to the cooking time.
In another pot, cook a small pasta like ditalini and drain.
Add to soup salt/pepper/more parsley/other Italian herbs if you wish.

Notes: 

Noodles and soup together makes a tasty, satisfying dish......if one likes/uses any form of grating 'cheese', it's a nice addition along with crusty bread.
