Here is a fun veganized American comfort food recipe. It’s easy to make, and if you choose your ingredients properly, you can avoid the excess fructose and other additives in the ketchup and tomato sauce. ---- John

Ingredients:

450 g 1 pound ground beef substitute (such as MorningStar Crumbles)
2 -3 stalks celery, chopped
1 small onion, chopped
1 (8 ounce) can organic tomato sauce
1⁄4 cup ketchup (I like Annie's)
1⁄4 cup barbecue sauce (your favorite brand)
5 ml1 teaspoon firmly packed brown sugar (optional)
5 ml1 teaspoon dry mustard
salt and pepper
15 ml1 tablespoon vegan Worcestershire sauce (traditional is made with anchovies)
15 ml1 tablespoon red wine vinegar
whole-wheat buns

Instructions:

In a large skillet, brown ground beef substitute, celery and onion.

Stir in remaining ingredients. Simmer, covered, 15-20 minutes, stirring occasionally.

If Joes appear too sloppy, leave cover off and let water evaporate.

Serve on toasted whole-wheat buns.
