Sigrid's PotatoPlus Salad (Potato-Celery Root-Apple-Pineapple Salad)

Sigrid writes: This is my variation of a salad served at a German friend’s house! The proportions of the ingredients are my approximations and can be changed. I like celery root that is not used much here, but you can substitute several sliced-up celery stalks.

Ingredients: 

6 large red potatoes (any firm potato will do!)
1 celery root (aka celeriac/knob celery) (approx. 1 1/2 lbs)
3 large apples ( I used Golden Delicious), diced, peeled if desired
1 1/2 - 2 cups fresh pineapple, diced
1 bunch scallion greens (or chives), cut up
28 g1 12oz container vegan sour cream
2-3 Tbsp apple cider vinegar
1-2 Tbsp oil
2-3 tsp salt
7 ml1 1/2 tsp pepper
1-2 Tbsp maple syrup, if desired
1 bunch radishes (for decoration, if desired)

Instructions: 

Cook the potatoes and celeriac several hours before you will assemble the salad, so that they can thoroughly cool. You can cook them the night before. Wash the celery root carefully, cover it with boiling water, and simmer it till soft and you can insert a knife into it; dependent on the size of the root this can take 45 min or more. Boil the potatoes till just tender (not falling apart), approx 25 min. As soon as you can handle the potatoes, peel them and put them in the refrigerator.
Half or quarter the celery root and peel it carefully (it can look rather knobby and “unsightly” from the outside but the peeled root is white, occasionally with yellowish markings.) Let it get cold in the refrigerator. When both potatoes and celery are cold, slice or cube them to your liking. Put them in a big bowl. Add the diced apples, pineapple, and scallions. In a little bowl stir together the sour cream (I would start with 3/4 of the container and add more later if necessary), vinegar, oil, salt, pepper, and maple syrup. Pour this over the potato mix and stir together everything carefully. Set in the refrigerator for at least an hour. Stir and check if you need to season the salad a little more. Transfer to a serving dish and decorate with the radishes (washed and trimmed and with patterns cut into them).
