Rebecca's Saute with Noodles

A simple and delicious combination of veggies over noodles, sprinkled with toasted sunflower seeds.

Ingredients: 

olive oil, salt, pepper

garlic
summer squash
sweet peppers
baked, smoked tofu
red onion

cauliflower

sunflower seeds
tamari
honey

thin noodles cooked in vegetable broth ("Mr. Kon's" noodles, found in Asian groceries, are ideal)

Instructions: 

Heat olive oil in saute pan with a little sea salt and ground pepper, then add the garlic, squash, peppers, tofu, and red onion.

Steam the cauliflower. Pan-toast the sunflower seeds in tamari and honey. Cook the noodles.

Combine all the vegetables and serve over the noodles, sprinkled with the sunflower seeds.
