Oatmeal Pancakes with Orange Sauce

Hearty pancakes with an unusual sauce----my family's favorite.

Ingredients: 

Pancakes:
710 ml3 c. soymilk
530 ml2 & 1/4 c. rolled oats
350 ml1 & 1/2 c. flour
22 ml1 & 1/2 T. baking powder
5 ml1 tsp. salt
3 eggs (I use Ener-G Egg Replacer)
89 ml3/8 c. wheat germ
120 ml1/2 c. vegetable oil
240 ml1 c. blueberries (optional)

Orange Sauce:
30 ml2 T. margarine or Earth Balance Buttery Sticks
30 ml2 T. whole wheat flour
240 ml1 c. orange juice
pinch salt
1 diced fresh orange

Instructions: 

Pour the soymilk over the oats and let stand 10 minutes or more. Sift flour,
baking powder and salt. Stir egg replacer into oats mixture. Add dry
ingredients and wheat germ. Stir in oil (and optional berries if using). Bake
on lightly greased griddle till golden brown, turning once. Serve with Orange
Sauce, softened jam, or syrup.

Orange Sauce:
Melt butter in saucepan. Mix in flour, stirring over medium heat 2 minutes.
Stir in orange juice and bring to a boil. Simmer till thick and creamy. Add
salt. Remove from heat. Stir in fresh oranges.

Notes: 

Egg Replacers
---Ener-G Egg Replacer is a powder that you mix with water; very convenient
---half a banana, well mashed, replaces one egg
---2 T. ground flaxseed plus 3 T. water replaces one egg
---1/4 c. mashed silken tofu or 1/4 c. applesauce replaces one egg; add about
1/4 tsp. extra baking powder to help with rising
