Oatée Gourmet Cookies

A new kind of oatmeal cookie made with nut butter, applesauce and maple syrup.

Ingredients: 

egg substitute for one egg ( 1 tbsp. Flax seed meal and ¼ cup water or ENER-G egg replacer)
240 ml1 cup maple syrup
½ cup applesauce
½ cup nut butter such as almond or peanut
5 ml1 tsp. vanilla
710 ml3 cups whole wheat flour or whole grain flour of your choice
5 ml1 tsp. baking soda
5 ml1 tsp. cinnamon
5 ml1 tsp. salt
470 ml2 cups dry oatmeal
240 ml1 cup nuts (optional)
240 ml1 cup dried fruit such as raisins, or craisins

Instructions: 

Directions: Heat oven to 350 degrees.

1. In a large bowl, prepare egg substitute. If using flaxseed meal, mix with ¼ cup water and let sit for five minutes.
2. Combine maple syrup, applesauce, nut butter, and vanilla with the egg substitute.
3. In a smaller bowl, combine flour, baking soda, cinnamon and salt.
4. Mix the flour mixture into the wet mixture.
5. When the two mixtures are combined, stir in oatmeal, nuts and dried fruit.
6. Drop teaspoons of dough on greased cookie sheets. Dough will not spread
so cookies can be spaced closely.
7. Bake at 350 degrees for 10 minutes.

Makes 5 to 6 dozen cookies
