A spreadable cheese with a cheddary flavor, good with crackers or on bread. I made a sandwich by spreading some on two slices of bread and putting apple slices between---yum!
470 ml2 c. raw cashews *
1 red bell pepper
120 ml1/2 c. nutritional yeast
1 lime, juiced
5 ml1 tsp salt
dash cayenne
Soak cashews in water 45 minutes and drain. Combine cashews and remaining ingredients in blender or processor and blend until smooth.
* You may substitute raw, pureed butternut squash for some or all of the cashews.
