Mashed Grains and Cauliflower with Mushroom Gravy

Mary sent this recipe, which she sampled in a Food for Life cooking class. She says, "we
practically gave our teacher a standing ovation"---so it must be good!

Ingredients: 

240 ml 1 c. minced onion
5 ml1 tsp. olive oil
470 ml2 c. millet, quinoa, couscous, or other grain of your choice
water for cooking 2 cups of selected grain according to package directions
950 ml4 c. cauliflower, cut into medium size pieces
2 ml1/2 tsp. sea salt

Instructions: 

Brush pot with oil and then add onion. Saute for 3 minutes. Add grain and roast for 5 minutes. Add cauliflower, salt, and water. Cover pot and cook until grain has absorbed all the water. When the grains are done, mash the mixture together with a potato masher. Add a little water if necessary in order to get a smooth consistency. Serve topped with Mushroom Gravy.
