Kale Salad

Here is a recipe that has been on our family table for some time.

Ingredients: 

450 g 1 lb. tofu, baked or sauteed, cubed
garlic chopped (opt.)
15 ml1 T. ginger chopped
120 ml1/2 c. sesame oil
59 ml1/4 c. tamari
59 ml1/4 c. rice vinegar
large bunch kale (strip kale from stems...cut to taste)
1/4 head read cabbage OR equiv. amt. raddichio
240 ml1 c. carrots sliced
--------------------------------
120 ml1/2 c. toasted almond slivers
30 ml2 T toasted sesame seeds

Instructions: 

Blanch kale 1 min. boiling water; plunge into cold. Toss vegetables and add seeds/nuts and cubed, sauteed tofu. Mix dressing ingredients and combine with salad.

Notes: 

Kale Salad is good for a side or can be a main course if paired with lo-mein noodles.
