Curry Sauce

Suzanne found this "really good coconut sauce dish" at a retreat.

Ingredients: 

890 ml 3 & 3/4 c. coconut milk
74 ml 5 T. soy sauce
1-2 T. curry powder
160 ml2/3 C. brown sugar (I use about 1/4 cup and it is just fine)
59 ml4 T. cider vinegar
3-4 T. arrow root or corn starch
freshly grated ginger--as desired

Instructions: 

Whisk until thick. Good over rice, veggies, tempeh or in a casserole.
