Coconut/CocoaNibs Cookies, GF

Sigrid made it up!

This was another experiment of mine. My son especially liked that the cookies were not too sweet and a little crunchy.----Sigrid

Ingredients: 

30 ml 2 Tbsp Chia Seeds, ground and mixed with 6 Tbsp warm water
240 ml1 cup melted coconut oil (scant)
120 ml1/2 c coconut sugar
5 ml1 tsp. vanilla
350 ml1 1/2 c almond flour
5 ml1 tsp. baking soda
Dash of salt
240 ml1 c unsweetened coconut flakes
120 ml1/2 cup cocoa nibs

Instructions: 

Let the chia/water mix rest and thicken for a while.

Beat the melted coconut oil, sugar, vanilla and chia with an electric hand beater. Add the almond flour mixed with the soda slowly. With a spoon or by hand, work in well the coconut flakes and cocoa nibs.

Let sit for 5 minutes to thicken more and then drop spoonfuls on a greased cookie sheet, flattening them slightly. (Makes about 30)

Bake for about 15 minutes until lightly browned. Check doneness a few times.
