Chocolate Pear Pie

Source:

Engine 2 recipe----with some changes by Christel

This cake/dessert is a real dream and soooooo easy to make. When I read the Engine-2-recipe "Chocolate-Icebox-Pie" I immediately felt: yes, I want to do that.
But I tweaked it a little: chocolate and pears are classical companions in desserts, so I changed the fruit to pears. I hope you all enjoy.---Christel

Ingredients:

For the crust:
240 ml1 cup dates
79 ml1/3 cup walnuts
79 ml1/3 cup cashews
79 ml1/3 cup almonds
5 ml1 tsp. vanilla extract

600 - 800 g. cooked* pears (about 1 & 1/2 lb.) cut in quarters; or 30 oz. can halved pears, rinsed and drained

For the filling:
1 package Silken Lite tofu (349 g. or 12 oz.)
30 ml2 tablespoons cocoa powder
5 ml1 teaspoons vanilla extract
79 ml1/3 cup maple syrup or agave nectar

Instructions:

Blend crust ingredients together in a food processor to achieve a sticky consistency. Press blended crust ingredients into a pie pan. Lay the pears on top of the crust and press along the sides.

Blend the filling ingredients until smooth.

Cover the crust with filling. Sprinkle with cinnamon.

Refrigerate until chilled.

Notes:

* To cook pears, peel them, cut in half, and remove seeds. Lower the pear halves into gently boiling water (add a spoonful of sugar and a couple of drops of vanilla if you like.) Poach for 15 minutes.
