Betsy's Low-calorie Chocolate Sauce over Bananas

A good-for-you chocolate sauce to serve over fruit or just about anything!

Ingredients: 

2 bananas cut up and frozen

240 ml1 cup almond milk (pre-warmed in microwave) Luzerne brand (Safeway here in CA)
59 ml1/4 cup cocoa powder or more if desired, dissolved in a little water (Chatfield's brand from health food store)
2 ml1/2 teaspoon stevia (Stevita Supreme)
2 ml1/2 teaspoon arrowroot dissolved in some water

Toasted coconut/walnut mix

Instructions: 

Pour almond milk into saucepan and slowly add cocoa powder that should be a bit on the thick side, stirring until lumps are gone. Add stevia (more or less until desired sweetness). Add water to the arrowroot and stir until desired thickness. Stir into the saucepan with the chocolate until a bit thickened, remove from heat.

Take frozen bananas, toss into Vitamix (can add some additional frozen fruit) mix until you get the desired consistency. Pour/spoon into cups and pour chocolate sauce over.

Top with coconut/nut mix.

Notes: 

I also toast unsweetened coconut and walnuts and keep them on hand for other uses. I just take a handful of coconut and nuts and toast in a cast iron skillet until browned. Constant watching so they don't burn.
