Betsy's Berry Preserves

Easy, homemade "jam/jelly/preserves or whatever one calls it... a sketchy recipe for something nice and not decadent unless you add more ingredients."

Ingredients: 

2 containers of strawberries, tops removed, and rinsed
2 containers of blueberries stems removed and rinsed
1 grated apple with skin on, rinsed

Instructions: 

Combine everything in a saucepan and cook until softened and reduced by about 1/2.
Add juice of 1/2-1 lemon depending upon how tart you like your preserves.
Add sweetener of choice--I used about 1/2 teaspoon of stevia.
Continue cooking until it reaches the consistency you want.

Notes: 

Notes: Any fruit can be used. I used berries since they were on sale.
Choose any sweetener you like, I used stevia since I wanted to keep the calorie count down. I experimented using xanthan gum to thicken it which sort of worked. Anyway, it was delicious and serves a multitude of purposes i.e. over a stir fry, banana sorbet, etc.
