Banana Blueberry Bars

Moist and delicious bars made of all good things.

Ingredients: 

240 ml 1 c. dates, pitted and halved
350 ml1 & 1/2 c. apple juice
710 ml3 c. rolled oats, divided
4 ml3/4 tsp. cinnamon
1 ml1/4 tsp. nutmeg
22 ml1 & 1/2 T. baking powder
1 large or 2 small ripe bananas
5 ml1 tsp. vanilla extract
240 ml1 c. blueberries, fresh or frozen-thawed
120 ml1/2 c. chopped walnuts

Instructions: 

Preheat oven to 375 F. Oil a 9x9 inch baking pan or line with parchment paper.

In a small bowl, soak the dates in the apple juice for 10 to 15 minutes.

In a medium bowl, combine 2 cups of the rolled oats with the cinnamon, nutmeg, and baking powder.

Place the remaining cup of oats, the bananas, and the vanilla extract into a blender or food processor. Add the juice from the dates and blend until creamy. Add the dates and pulse a few times until they are in small pieces.

Pour the banana mixture into the dry ingredients and mix well. Stir in the blueberries and walnuts.

Pour the batter into the baking pan and bake 30 to 35 minutes or until a toothpick comes out clean.

Cool 5 or 10 minutes before serving.
