Baked Squash with Cumin, Lemon Pepper and Garlic

Joe brought this flavorful rendition of delicata squash to our Fall potluck.

Ingredients: 

delicata squashes, sliced lengthwise and seeded
half-inch slices of zucchini, tomatoes, and onions
elephant garlic heads
cumin
lemon pepper

Instructions: 

Drizzle the squashes with olive oil and place on a bed of sliced zucchini, tomatoes, and onions.
Sprinkle with cumin and lemon pepper.
Cover with foil and bake at 375 degrees for about 45 minutes.

Peel the garlic heads, coat them with flavorful olive oil, seal them in balls of aluminum foil, and bake them 35 min. also at 375F. Then, after the other veggies are baked, remove the garlic from the aluminum foil, put it on top of the rest of the veggies, and broil it all together for about 8 minutes to give it a bit more flavor.
