Apricot-Almond Bars (Vegan, Gluten-free, Sugar-free)

Sigrid brought these delicious and healthy treats to the Spring, 2017 potluck in Portland.

Ingredients: 

470 ml 2 c dried apricots, cut up
470 ml2 c almond meal/flour
2 ml1/2 tsp baking power
15 ml1 Tbsp flax seed
15 ml1 Tbsp chia seed
6 Tsp warm water
79 ml1/3 c coconut oil, melted
110 g4 oz applesauce
5 ml1 tsp vanilla
2 ml1/2 tsp cardamom (or 1 tsp almond flavoring)
1 ml1/4 tsp salt
120 ml1/2 c coconut flour, or a bit more (almond flour would work)
handful of sliced almonds (coconut flakes would work, too)

Instructions: 

1. Pulse the apricots and almond flour in a cuisinart till mealy. Stir in the soda.
2. Grind the flax and chia seeds and mix with the warm water.
3. In a large bowl, mix together the melted oil, apple sauce, flavorings.
4. Add the flax/chia mix.
5. Stir in the apricot/almond flour mix.
6. Add in as much coconut flour as you want to make a firm dough.
7. Press the mix into a 10x10 or 9x13 cake pan. Sprinkle almond slices on top. 8. Bake at 350 for 25-30 min. The bars will be moist inside.
9. When cooled for about 10-15 min, cut into desired shapes and sizes.
