This week's email from Eve

... with a kale salad recipe. We liked the dressing enough to have it on other things, so it's on our website twice, once by itself:http://mindfulcooking.org/recipes/lemon-miso-dressing
....and once with the kale salad:http://mindfulcooking.org/recipes/kale-salad-lemon-miso-dressing
Enjoy!

Our map has gotten friendlier with two more names attached---Mason Byles here in Portland-----and Nancy Adrian in San Jose. Nancy was a little hesitant, thinking she wasn't "worthy" because she isn't vegan. Please, everyone----this is not and was never meant to be an exclusive club for 100% vegans wearing haloes! The point of our project is simply to help people get acquainted with the possibilities of plant-based cooking. How far you go with it is up to you. Everyone reading this is definitely worthy and I'd love to put your name on the map!

Maybe I should explain----having your name on the map doesn't mean anyone can contact you. I wouldn't post your street address even if I knew what it was! I don't give out email addresses either. Nobody wants to get spam. The map is simply a representation of the virtual community we have become. You already know that wherever there's one of those upside-down teardrops, there's someone who reads this email along with you. Having a name there, even just the first name, makes it just a little more real. If you are shy about having your name on the Internet, try this: use your browser to search for your own name. You may be surprised to find out how much the world already knows about you! Attaching your name to your town is really minimal information----for instance, letting us know there's a "Cathy" in Kansas City would hardly surprise anyone. There must be hundreds of Cathys there! Justina in Denver might be another matter, seems like a less common name, but I just checked and found 5 Justinas in Denver before I stopped counting.

So---please do send an email tell me to add your name if you're willing!

Another note about the map: Linda suggested listing the towns in alphabetical order. This makes good sense and I have tried to do it but it isn't straight forward, and, to my surprise, my resident geeks seem to be stumped by the problem. Does anyone know how to do this on a Google map? I haven't given up and I'll work on it when I have time. Meanwhile, the towns are quite a jumble. Maybe that will add to the adventure... ;-)

While you're looking at the map, please look below it at the Active Discussions-----there are four new posts----two reviews from Robb in New Jersey and two items from Susan in Portland. Thanks, Robb and Susan! Would anyone like to chime in? http://mindfulcooking.org/

Linda in Portland appreciated George's link to a food-carbon quiz and Christel's notice about the rally in Kentucky:
I took the test at eatlowcarbon.com. Lots of things to think about. I only missed one on the test -- the salmon vs. tuna. Doesn't most tuna come from far away also, like Thailand?
I enjoyed reading about the "Rally for a PlantPure Nation". Looking forward to seeing the film sometime. I hope there's a rally here in Portland.

I also heard from George in Pennsylvania this week, who sent a very recent article on meat and climate change:
This article, out yesterday in the Washington Post, discusses an Oxford University study just published that talks about the climate change impact of eating meat. Wow! It's more than I thought. " More Park veggie sausages, Mom. Please !".

Happy cooking,
