Risotto Calisthenics

Kris started the Vegans Eat What website, the one I suggested some months ago would be our "sister website", and the project is thriving as you will see in her newsletter. If you keep scrolling down you will find articles by Glenn (Glenn's Story) and Justina (the Vegan Cuts Snackbox Review), and if you go even further down you will learn that there are plans for a Michigan Veg Fest (Kris will be there) followed by an Ann Arbor Veg Week ---coming up in April. I happen to know a few people on this mailing list who may be interested (you know who you are!)

All of this reminded me that Justina sent two of her favorite risotto recipes in December which I had not posted----so sorry! I blame the distraction of the holidays. Here are the recipes, along with Justina's wise counsel on how to keep stirring a risotto without getting a backache:

I think all risottos take a long time of standing and stirring. That might be a good job to “assign” to one who can stand a long time – or even put a stool by the stove for that part. Or stir, move to a chair or on the floor and do lower back stretches, get up and stir and add liquid, do another stretch or two, etc. – that can help with standing, which is really hard for those of us with back issues.

One more news item: Linda and John have offered to host our Winter Potluck, coming up Sunday, Feb. 23. They are just back from Thailand where they spent a full day at the Thai Farm Cooking School. They will have much to tell us about that. Thanks, Linda and John!
