Plant-based creativity

We have two new cooks joining our circle, Jennifer Hahalis in Phoenix, Arizona, and Kate Bernesderfer here in Portland, Oregon. Welcome, Jennifer and Kate!

We have a bunch of delicious new recipes, too. Here are the last three dishes from our January potluck in Portland:
----Susan's Saffron Rice --- Saffron Rice
----Linda's Butternut Squash Korma --- Butternut Squash Korma
----and John and Sally's OM Great Spirit Black Rice Polenta --- OM Great Spirit Black Rice Polenta Casserole

Another new one is a recipe for Baked Tofu from Marge in California: Baked Tofu

Justina and Glenn in Colorado sent this colorful combination, Polenta with Greens, Roasted Tomatoes and Lentil Walnut Crumbles, adding:
This was not just a tasty dish, but it is very pretty as well.
Namaste, Glenn

Polenta with Greens, Roasted Tomatoes, and Lentil Walnut Crumbles

So many new recipes --- but the previous ones are not forgotten. Chris in Bristol, UK sent a note of thanks for Susan's energy ball recipe:
Hi Eve,
I just made Susan's Peanut Butter Chickpea Energy Balls. Very good - thanks Susan!
Chris

Moving on to other subjects, Betsy in California sent a notice about Denise Kling-Pelto, a Food for Life instructor. This brought back memories for me as I took the course several years ago and found it inspiring: https://secure2.convio.net/pcrm/site/Donation2?df_id=22828&22828.donatio...

Betsy also sent this article on alternatives to leather Some are quite innovative --- who would think of using mushrooms, pineapples, bark and even stone to create leather-like materials?

One more from Betsy --- some unusual, eye-catching artwork from a German artist:
Hartmut Kiewert´s paintings are an attempt to subvert the blockades of consciousness against the exploitation of animals.

These times are certainly causing an upwelling of creativity --- in the cobbler shop, the classroom, the art studio --- and for most of us --- the kitchen.

Happy cooking, everyone!
Eve

P.S. We are about to have a new way to talk to each other --- on a Plant Pure Communities page. I'll let you know all about that in a special mailing soon!
