A note from Plum Village

Hello Mindful Cooks,

I'm back in town and happy to let you know about two more special dishes from our Spring Potluck. You could begin your meal with Lea's special Turkish Eggplant Dip spread on her Homemade Five Seed Crackers:

Delicious!
While I was gone, Sue in New Mexico sent us greetings from Plum Village:
Dear mindful cooks
I am so happy you are there. I am in Plum Village for the 21 day retreat and yesterday at the sangha fair - information tables about various sanghas around the world. I sat with the earth holder table and there are many many interested people from Various countries around the world, (lots from Germany!), who wanted to know more both about earth holding and mindful eating.
It was wonderful to share the resources with them that are on our website. They were excited to see all the resources there following our link.
We have also had deep conversations around mindful eating/plant based eating in my dharma family sharing group and it is lovely to have the resources you are putting together to share with others when they say they don’t know where/ how to begin.
Voila! There’s been so much work by our plant powered foods/meals team done to prepare the soil for sharing menus, ideas, earth concerns etc with others.
What a lovely gift all of you are giving our mother earth. ?????
With gratitude,
Sue

Thanks, Sue, for all your good news!

I also heard from Marge in CA who watched the film Debbie in CO suggested last time:

I was very moved to see this new, short film on various religions and their beliefs about compassion for animals. I encourage you to look at it! I think it’s beautiful!

With hot weather setting in, does anyone have easy, refreshing summer recipes to share? Hope you will send them in.

Happy cooking,
Eve
