Ginger cakes and other news

Our circle is growing: Amy Rademacher is joining us from Denver, CO. She is a member of the Denver Sangha and also part of a similar program called Circles of Love at the Mile Hi Church in Lakewood. It was there that she met Justina and heard about our project. Welcome, Amy, and thanks, Justina!

I have a new recipe for you, sent in by Eliza in Massachusetts. It's a cake called "parkin" that is traditional in England on Guy Fawkes Night. Maybe I should have posted it when she sent it to me so you would have it in time for that event (Nov. 5), but I wanted to get a photo and it took me this long to get to it. Eliza tells me that parkin is similar to the Dutch "stroopkoek". Eliza and I both have a Dutch heritage so are both enjoying that connection. We have several Netherlands people in our circle --- are you all familiar with stroopkoek? The cake is made with ginger and molasses, perfect for this season. Here is Eliza's recipe, followed by my variation (adapting to a spouse who objects to molasses :-)

I also want to alert you to a recipe I posted recently, Chilean Squash, my current favorite way to fix squash:

I heard from Betsy in California who sent an interesting article about an all vegan Mexican restaurant:
http://www.dallasnews.com/life/life/2016/11/17/dallas-couple-transformed...

She also followed up on the news about "muskin" (vegan leather made from mushrooms):
Going through some previous magazines I came across some vegan designers that maybe some of your readers would like to know about. They may be very pricey but they are using recycled materials to make their shoes, handbags, dresses, etc. So here are a few.

Jill Milan
Those are just a few, some here in the LA area and others in the UK.
I went through the whole list and they look good, where to buy is another problem since I never order anything online.

I heard from Christel in Germany, too, who sent these suggestions:

I would like to recommend two wonderful apps for all of us:
1.The Forks Over Knives Healthy Recipes & Easy Meals - App:
https://itunes.apple.com/us/app/forks-over-knives-healthy/id903911740?mt=8
It provides more than 200 ( easy to prepare and delicious ) recipes for the everyday and the festive cooking. Many of my plantbased idols have contributed, like Rip Esselstyn, his sister Jane and his mother Anne, Chef AJ etc. There is also the possibility to create a shopping list.
2. The Oh She Glows App from Angela Liddon:
https://itunes.apple.com/de/app/oh-she-glows-healthy-plant/id1079607960?...
Both apps are inexpensive little treasures.

You may remember that I've been working on a write-up about our Portland potlucks for the Earth Holder Sangha. It's ready now and I'll attach it for any who may be interested.

I wonder what's happening in your kitchen these days. Do send us your recipes!

Happy cooking,
Eve
